Stainless Steel tanks for Fermentation and Blending.

These large wooden casks and uprights offer a surface-to-volume ratio which
allows for a slower maturation rate than the smaller barrels depicted below.

We found Caprai buys lots of medium+ toast level barrels from many cooperages,
including Franois Freres, Gamba, Saury, Nadalie, Tonnellerie Rousseau and
Berthomieu.

These are casks of a more traditional capacity. Caprai's Montefalco Rosso
is a blend of Sangiovese, Sagrantino and Merlot and spends about a year in these
Slavonian oak casks. Their reserve bottling is a similar blend, but part
of that wine spends time in the smaller French oak barriques.

If you're in the area, do stop by this winery as Caprai maintains a small
tasting facility. It is open Monday-Friday from 9-12:30 and
3pm-6:30. Saturday from 9am-1pm.
